A snack here is something you eat between meals without turning it into dinner, even when the dish is substantial. Vegetarian Kimbap and Vegetarian Tteokbokki are both full Korean street-food plates, and they land in this category anyway because they're built as a stop along the way, not the main event.

Vegan Nachos with Spicy Cashew Cheese comes together in about twenty-five minutes and feeds a group. Vegan Oatmeal Cookies and Vegan Banana Bread are both close to an hour in the oven and keep well beyond the day you bake them. Agedashi Tofu lands around an hour and leans savory. Pani Puri is the real project, about two hours and twenty minutes.

The thread running through the fried half of this category is starch and steam. Agedashi Tofu's crisp shell comes from a potato starch coating that crisps in hot oil while the tofu underneath stays custard soft, and Pani Puri works the same trade in reverse: a thin dough disc puffs hollow because trapped steam has nowhere to go but out, and it only holds that shape while dry. Both are best eaten right away, before a broth or filling soaks in and softens what the oil just crisped.
